Pesto Trapanese from the province of Trapani, alla inverno (winter) style. This pesto recipe takes the gift of plump Sicilian tomatoes and blends them with Sicilian Almonds from Avola. In the Summer months, you'd use fresh tomatoes, but you can make a comforting winter version with canned tomatoes and dried wild Sicilian oregano:
-Marino Organic Monte Iblei Sicilian EVOO from the import pros at Ritrovo, this olive oil is made from the Tonda Ibleo variety, native to its namesake, the Monti Iblei in southeastern Sicily. Green tomato and fresh cut grass Estate produced and bottled. Early-harvest, certified organic, and small-batch.
-Marino Dried Whole Tuono Almonds These aromatic, naturally dried Almonds are harvested in the sun drenched hills of Marino Farms in southeast Sicily. Grown on hills just east of the ancient city of Syracuse, the almond and carob groves are well adapted to the hot Sicilian Summers and cool Spring breezes. The Tuono variety is a beautifully shaped almond, prized for it's rich flavor and high content of almond oil. Perfect for making Sicilian pesto, tossed in salads or roasted with fish. The gorgeous shape of the almond also adds luster to baked goods, homemade taralli and breads and fits beautifully on cheese and meat platters. The true taste of the Sicilian countryside!
Azienda Agricola Gangi Dante is located in the heart of Sicily, seven kilometers from Resuttano. The 80-acre organic farm is at the base of the Madonie Mountains, its rugged terrain and peaks home to Madonie Park. The park is a protected reserve helping maintain a balance with wildlife, farming and village traditions. The landscape around the mountains is dotted with giant holly (some hundreds of years old), the rare Mandonie spruce, and Sicilian fur, making for a truly breathtaking backdrop to the farm.

A portion of their organic 80-acre farm to the production of the very aromatic Puanta oregano. This variety of oregano is a cross between marjoram and oregano and is prized for its delicate flavor profile of sweet, spice, and citrus notes.
-*Libera Terra Busiate bronze dye pasta made with 100% organic Sicilian grain grown on seized Mafia lands. Social justice never tasted so good. Busiate is a spiralled spaghetti-like pasta shape, originally from the seaside city of Trapani in Western Sicily. With its charming ringlets, busiate is often said to be shaped like an old landline telephone cord
-Caravgalio Vini. This package includes the two bottles small production, famed wines of Antonio Caravaglio from the Aeolian Island of Salina: the dry Malvasia and the rare, indigenous grape Corinto Ner, native to the Islands.
For more than 500 years, the Caravaglio family has cultivated wine grapes on Salina and Lipari, establishing early on the traditions and practices that would be followed for generations. Winemaker Antonino Caravaglio’s ancestors were certainly among the first to partner with Venetian traders bearing rootstock from Greece, planting the original Malvasia delle Lipari and Corinto Nero vines. The grapes are farmed organically, harvested by hand and fermented with indigenous yeasts in temperature-controlled, stainless steel tanks.
*Libera Terra was founded with the goal of developing stunning but “difficult” territories, through the social and productive recovery of the land freed from the Mafias and the making of high-quality products obtained using environmentally and socially friendly methods. It also plays an active role in the territory, involving other producers who share the same principles and encouraging organic farming. Beyond rehabilitating the land, Libera Terra is also involved in the regional schools, educating the youth about what they do and the importance of changing the social norms.
