De Conciliis is located in the relatively uncharted Cilento zone on the Campania coast. The vineyards are situated atop high-altitude cliffs looking out on the Mediterranean. The grapes grow on a unique soil type for the region– white most of Campania’s wine regions have some amount of volcanic material, the Cilento boasts flysch (sandstone, soft marls, and sandy shales) and calcareous clay. The wines are made in a minimal intervention style, organic certified but veer more towards the natural end of the spectrum (the clean kind though), incorporating biodynamic philosophies and techniques with the intent to convert 100% to biodynamics.
Soft pressing, then the must (juice) is separated from the stalks, then clarified and fermented in temperature controlled stainless steel tanks. The second fermentation also takes place in large tanks (not bottle, like Champagne) by a process named the Martinotti* (or Charmat) method. 100 days on lees in the same large stainless steel tanks.
Citrus, pear, peach, floral notes, and a distinctive salty minerality, with hints of bread crust. A notable, almost salty, minerality. Quite fresh with some finesse, and a long and clean finish which is remarkable given this is a tank-fermented wine.
