“Calcis” is Latin for limestone, a fitting name for the bedrock that defines this land. Just beneath a thin layer of sandy soil lies a deep stratum of limestone.

45 Grillo, 45 Insolia, 10 Moscato (these grape varieties are more typical to western Sicily. Perhaps a testament to the spread of culture and influence from the West, but also Le Fontane’s effort to distinguish themselves from COS). Grapes ferment with native yeasts in concrete after 15 days of skin contact, then age 8–10 months in unlined tanks cement tanks. The wine is golden hued with notable structure and complexity. It opens on the nose with clean, lemon peel and beramot aromas. On the palate, it’s vibrant despite being a full bodied white. Refreshing with bright acidity and a distinct salinity. Try with pizza bianca, anchovy, swordfish pie, dry rub BBQ pork ribs.
Le Fontane is the result of a new generation’s vision, rooted in the land and legacy of Sicilian winemaking. Raised among the vineyards of their family estate, surrounded by the scents of harvest, the warmth of Sicilian summers, and the quiet presence of barrels and amphoras, the Occhipinti siblings were immersed in the world of wine from an early age. At COS, their father, Giusto Occhipinti, helped shape the philosophy of natural winemaking in Sicily. Under his guidance, they learned to respect the rhythms of the land, to appreciate the patience required in the cellar, and to understand the quiet power of tradition.
Now, building on that foundation, they are beginning a new chapter. With hands in the soil and hearts in the work, they are crafting a personal vision—one that speaks to their time, their experiences, and their generation. Informed by study and travel, they are embracing the challenge of starting anew. While COS remains an essential reference point, Le Fontane seeks to develop its own language of wine, one that begins with a clean slate and an open mind.
