From Bitetto, Puglia, the Crudo olive oil comes from the Ogliarola olive variety. Nicole Schiralli recently took over the Frantoio and Olearia from her father and represents a new generation of young Pugliese investing in their homeland- an incredibly important step as southern Italy is facing a mass emigration of youth to other parts of Europe where there is more economic and social opportunity for them.
