A classic pasta dish from Bari. It’s spicy, it’s red, and it’s deeply comforting-Spaghetti all’Assassina. This pasta is perhaps cooked unlike any other you’ve made. Not boiled, but pan-fried and slowly hydrated, yielding an end result with varied textures in every bite: some cooked to al dente perfection, some caramelized deeply savory, some even burnt.  While totally manageable at home, Spaghetti all’Assassina is also the truest definition of a labor of love.
